Baking during lockdown

So along with the rest of the world, we in the UK are also currently on #lockdown and as a photographer, alone at home, it is frustrating not taking photos, especially as my biggest passion is to photograph families and babies. But as hubby is away for work at the moment, I am completely isolated, on my own and on the verge of talking to myself… as well as answering myself LOL!

And for those who know me, I am not the most experienced in the kitchen, well atleast not when it comes to cooking and baking, I am however a pro at cleaning. So I decided to climb out of my comfort zone and bake one of my favorite recipes, BANANA BREAD, and decided to document it as I went along.

It was a different experience for me and it was fun, and if I may say so myself, it was Yummy!!! Haha

So for those who are interested, below is the recipe I used. If you make it, please comment with feedback and photos 🙂

125g butter, softened

1 cup white sugar

2 eggs

2 large bananas mashed

1 tsp vanilla essence

2 cups flour, sifted

1 tsp bicarb of soda, sifted

1 tsp baking powder, sifted

Preheat the oven to 180°C.

Cream the butter and sugar together until the butter is light and fluffy.

Add the eggs one at a time and beat well.

Add the bananas and vanilla essence.

Fold in the dry ingredients.

Grease the loaf tin.

Bake for 45 to 50 minutes.

Remove from the tin and leave to cool on a cooling rack.

And ENJOY!!!
